Martha Turner and the Executive team came to our Martha Turner Properties – Kingwood office this morning. It is such an honor to have Martha and company meet with us, so our stellar office assistant & I wanted to offer a special breakfast buffet. An egg casserole is a great dish to feed a breakfast crowd, and re-heated it makes a tasty lunch too. My recipe is adapted from the “Emmaus egg casserole” which is lovingly served at every Walk to Emmaus. This is the recipe:
Remove crusts from 6 slices of bread; butter the bread; lay butter side down in a 9×13 casserole dish – I prefer wheat bread so I can claim the casserole is healthy.
Sprinkle 1 pound breakfast meat over the bread – choose ham, cooked bacon, browned sausage, or a combo of meats.
Sprinkle 2 cups cheese over the breakfast meat – choose shredded Swiss, shredded cheddar, American strips, or a combo of cheeses.
Beat and pour over the cheese: 2 cups whole milk + 6 eggs.
Cover and chill overnight.
Bake, covered, @ 350* for 30 minutes. Uncover and continue baking to set in center and brown on top, another 20-30 minutes.
Option: Spice it up with sliced jalapenos and offer Louisiana hot sauce on the side.
